The last 2 years I was busy with everything else I’d grown myself and trying to get it all put away that I totally missed the season for canning peaches.  I don’t buy many other fruits – this is my exception.

I like to wait for the big fresh ones from the Okanagan valley in British Columbia. They aren’t picked green because I buy them from a guy that makes a trip just for fruit. They come back perfect and smelling ‘just peachey’ – like Heaven’s orchard (or what I think it might smell like). They were just over $2 per lb. but the aroma was free :)

I make the syrup only 1 part per 3 (1:3) strong, which is weak but perfect for Hubby’s tastes. I do some canning with Honey too. The freezer is packed or it would be the best option as far as retaining the original taste.

This is just another effort to put something on my shelf in case I can’t get it from the store’s shelf in the fresh version. I wouldn’t want to buy their canned stuff. The sugar content in those cans makes me ill just thinking about it. They use a 1:2 syrup. Get this: 1 cup of sugar in 2 cups of water.

So…just letting you know…it’s time. Make sure you get the ‘Freestone’ (as opposed to Clingstone or Semi-Freestone)type so that they come away from the stone easier. I have tried the other, and learned my lesson the hard way. The squished up mess I had in the end finally had to be made into jam. If I don’t get to making peach jam this time around I can always mash up the peaches and thicken it with cornstarch or something too when I need it.

I’ve also learned that the pressure canner might be good for some things, like meats, etc., but if you don’t want soggy, mushy peaches and other fruit, then you better use the’ hot water bath’ method.

  1. You really hurt me with this. Haha! Those are some of my favorite peaches in the whole world!! Tree ripened. So hard to find anymore. Of I were there you would have a serious inventory problema. SIGH! Did you buy organic?

  2. Sherry there is a horticulturist who grows citrus year round in B.C. In an unheated greenhouse. Also a banana plantation in Osoyoos B.C. Move to B.C. :)

  4. Thanks! I dont believe the cost is much more according to this example. You paid a little over $2. / lb and these appear to be $2.80 / lb. If this is a representative example, you paid almost as much for these as Organics. My guess is for shipping and handling.

      I figured out more precisely that I paid $30 for 18# and that covered everything. the organic ones online would also need shipping added.

        That makes more sense about the pricing. Anyway they are there, like you say if you want to pay a LOT more. As always, paying more for clean food we should be entitled to. .Anyway I am glad you got the peaches all canned and they look FABULOUS!

    I am curious, as I have heard that canning with honey might be an issue because of the chance of botulism. Any info on that? I want to say, too, that I have canned peaches, yes, without sugar or honey. I used pineapple juice. They were dee lish and sorry I have none left. It is hard to get peaches here now that Extra Foods has become No Thrills, *hack* I mean No Frills, and case lot sales are less available.

      No Thrills,hahahaha..I like it. Honey that isn’t pasteurized is ant-bacterial by nature. The honey man down the road says none will grow in it, so why do they pasterize it? I don’t know either. hubby’s mom canned with it a lot when sugar was rationed years ago. That’s just my opinion on it. Pineapple would be splendid. I can’t grow any here…grrr.

        Honey should be safe, particularly if it is heated into a syrup. I would do this with anything going into the jar. Two thumbs up on using fruit juice. White grape juice is popular. I would LOVE to try yours with Pineapple Juice!
