Pumpkin Seed Milk


With all the pumpkinsĀ and zucchini and squash I’ve collected a good-sized collection of seeds. I seem to rarely have the time to pick away at them to get at the goods inside the shells. I pondered on this…how could I get the hulls off? How do they do it commercially – there has to be a magic solution.


I never figured out the commercial secret, but I did find a solution of sorts. A solution of water and seeds. You put them in a blender, splatter the tar out of them, strain the refuse and drink it. This left me staring at the waste now…the inseperable bits of nut-flesh mixed in the bit of hulls. I’m not sure if I’m completely satisfied yet. Any suggestions? what-to-do-with-too-much-zucchiniseeds-in-the-blender



How dooo they get the pumpkin seed out of their shells?


The milk which tastes ok, but perfect with a little drip of honey.

    To remove the hulls: after seeds are washed and strands of pumpkin removed, lay the seeds flat out onto a cloth or parchment paper (not paper towel as they will stick) and allow to dry. Run a rolling pin over them gently enough not to squash the seeds but to break the shells. Fill a pot with 2 parts water to seed. Turn to medium heat and bring to boil and then add the seeds. Boil for 30 minutes. The hulls will float to the top and then can be strained off. Allow seeds to dry on parchment paper. The drawback is that the seeds have been boiled. I do not know if this ruins their nutritional value or how much has gone out into the water. Drink the water?

    O, I forgot to mention that the shell or hull isn’t actually a shell at all but a fibrous coating to protect the seed. The fiber is very beneficial to eat and helps with digestion and was used to treat urinary tract infections and intestinal parasites. Perhaps coat them lightly with oil, season and bake and eat dried. Or blend them vigorously and make into a whole soup? Makes me want to grow pumpkins everywhere!

      I don’t know if I could blend them that fine…uh…dry the ‘coat’ and grind in something: grinder???…chew it like gum?? I didn’t know that about the hulls.
